Annabel Karmel’s Hidden Veg Quesadillas
Sometimes you need dinner on the table…fast! Quesadillas are such a simple go-to meal for this exact situation. Plus, these contain lots of hidden veggies so not only are they super easy, they’re packed with goodness too.
MAKES: 2 LARGE TORTILLAS
Ingredients
75g broccoli florets
1 tbsp sunflower oil
½ red onion, chopped
½ red pepper, diced
1 tomato, chopped
1 clove garlic, crushed
30g Cheddar cheese, grated
30g mozzarella, grated
4 large tortilla wraps
Method
Cook the broccoli in a steamer until just tender. Drain, cool and roughly chop.
Heat the oil in a saucepan. Add the onion and pepper and fry until soft. Add the garlic and tomato and fry until the tomato has softened. Add the chopped broccoli.
Spoon the mixture onto two wraps and spread out to the edge. Sprinkle with the cheeses and place the remaining wraps on top and press down firmly.
Heat a little oil in a large frying pan, add one wrap and fry for 2 minutes on both sides until golden, crisp and the cheese has melted.
Repeat with the remaining quesadilla.
Slice into wedges.
